Recipe for the Fruit Cake (class 40)

Ingredients:

6 oz (175 g) soft margarine

6 oz (175 g) sugar

3 eggs, beaten

9 oz (250 g) self-raising flour

¼ teaspoonful salt

12 oz (350 g) mixed dried fruit

2 oz (50 g) glacé cherries, quartered

1 oz (30 g) blanched almonds

Milk to mix

Method

Heat the oven to 350 ºF (175 º C, gas mark 4; adjust for fan ovens) and grease an 8 in (20 cm) round cake tin and line it with greaseproof paper.

Prepare the fruit and chop the almonds. Sieve together the flour and salt. Cream together the fat and sugar and beat in the eggs one at a time. Add the dry ingredients and mix with a little milk, if required, to give a stiff dropping consistency.

Turn into the tin. Smooth the top and bake in the oven for about 1¾ - 2 hours or until a skewer comes out clean.
